If you are over the same O’l, same O’l salads then this hearty Cauliflower Rice Salad with Turmeric Vinaigrette Dressing is a bit of a flavour bonanza.
It’s chunkier, crunchy, tangy, nutty, sweet and packed with yummy freshness.
A great colourful salad on any dinner table and can be used as an accompaniment for that juicy fried chicken or as a meal all on it’s own.
I hear you ask “How do I make Cauliflower Rice not soggy?”.
This Cauliflower Ride Salad can be made easily with a knife and chopping board, in your food processor or using a hand grater.
They key to making this recipe a hit is by cutting the cauliflower into much larger pieces rather than a fine rice texture.
If you have a Thermomix it all can be chopped quick and easy in that too. (used speed 5 for 1 second only and then checked to see if it was small enough. If not repeat the process again).
Ingredients for Cauliflower Rice Salad
Simple ingredients but when combined make a great combo.
- Cauliflower – fresh and cut into larger pieces for more of a crunchy texture.
- Capsicum – sweet with a vibrancy and redness
- Pepitas – toasted for an extra crunch and nutty flavour
- Carrot – sweet strands adding colour
- Shallots – zingy, fresh and crunchy
- Parsley – fresh and tender and adds nutritional benefits
- Celery – gives this salad a nice fresh crunch
Turmeric Dressing
The Turmeric Dressing is very colourful and tastier than I thought it would be.
Bright yellow makes it a great dressing that you could also use on many other of your fave salads with just enough tang and sweetness.
Dressing Ingredients
- Olive oil – a great nutty flavour base
- Apple cider vinegar – adding a hint of tanginess
- Honey – just the right amount of sweetness
- Turmeric – so much colour and a unique flavour
- Ginger – a little warmth and body
- salt – the binder of Flavours
Cauliflower Rice Salad with Turmeric Vinaigrette Dressing Recipe
(For this salad the method below is using a conventional food processor and hand grater)
We prefer a more chunkier cauliflower rice. If the cauliflower becomes too small after processing it can make the salad soggy. If you are using a Thermomix, chop on speed 5 for 1 second.
If using a food processor pulse in second intervals. Look at the size of the cauliflower to check if it’s the consistency you like.
A hearty salad full of flavour. With a homemade turmeric dressing this one is a winner with a Summertime barbeque.
- 1/2 large cauliflower blitzed coarsely in a food processor
- 1 carrot grated
- 1 red capsicum finely diced
- 1/2 bunch of flat leaf parsley finely diced
- 2 shallots finely sliced
- 1/3 cup pepitas lightly toasted
- 2 stalks of celery finely diced
- 1/3 cup olive oil
- 2 tbsp apple cider vinegar
- 1-2 tbsp of runny honey
- 1/2 tsp Turmeric
- ½ tsp ground ginger
- ½ tsp sea salt

Lightly toast the pepitas in a frying pan.

Mix the coarsely blitzed cauliflower, diced capsicum, parsley shallots and celery into a largish bowl.

Add all the dressing ingredients into a medium sized jar and shake till combined.

Pour over the salad and toss. Mix in the pepitas and enjoy!

This is a hearty salad full of flavor and easy enough to whip up for a barbeque. Can be served on thinly sliced barbeque meat on a Roti topped off with Cauliflower Rice Salad with a dollop of Greek yogurt.
To make this salad vegan replace the honey with a vegan sweetener of your choice.
For the Cauliflower Rice Salad you may only need to use half the quantity of the Turmeric Vinaigrette Dressing..
Store the rest of the dressing in the fridge for a couple of days and use on whatever you like.
I couldn’t believe how simple the Turmeric Dressing was to make.
I had all the ingredients on hand at home, (so no sourcing last minute at the grocery store) and popped into a jar to shake and mix.
Definitely very yellow from the turmeric powder but that is what makes this Cauliflower Rice Salad so moorish!. (be aware if you have white bench tops!!)
When mixing the honey make sure it’s a runny consistency. If it’s not you can pop it into the microwave for 10 seconds before pouring into the jar.
How can I make this a Vegan Cauliflower Rice Salad?
Easy. The only ingredient in the recipe that isn’t classed as vegan is the honey in the Turmeric Dressing. Just omit and use a sweetener of your choice.
