These Simple Apricot and Date Balls (or sometimes known as Apricot Bliss Balls), are one of the first no bake sweet treat that we made when we started out at Just One Bite At A Time.
It’s become one of our go to snacks and they are super easy to make when you’re in a hurry. Oh and our friends and family love them too. Super easy using wholesome ingredients that you can have on hand in your pantry and a great way to enjoy something sweet but also a healthy treat.

What Ingredients do you Need for Apricot and Date Balls recipe?
- Rolled Oats – blitzed to a fine floury texture
- Apricots – Natural sweeteners
- Dates – we used regular dates (packaged dates) for this recipe
- Coconut Oil – 2 tabs to bind it all together
- Desiccated Coconut – to coat these lovely healthy apricot balls

How to make Apricot and Date Balls
Step 1. Blitz up your oats first in a high-powered food processor. Remove and then blitz up the dates and then the apricots individually.
Step 2. Add all the ingredients back into the food processor along with the melted coconut oil to combine. If needed add a little warm water to create cohesiveness or a squeeze of orange juice.
After blitzing up the ingredients you add the melted coconut oil and roll mixture into balls. (bitesize balls).
Step 3. Roll in extra desiccated coconut and pop onto a baking sheet and into the fridge until frim.

Recipe Tips
- We’ve found that blitzing up the dates, dried apricots and oats is easier done separately rather then altogether in the one bowl at the one time.
- If the dates and apricots seem rather hard or firm, you can warm them (only slightly) in the microwave to soften before blitzing up.
- You’ll need a high powered blender for this recipe. I use a Thermomix but a food processor will also work beautifully.
- If the mix is too stiff you can add a little warm water – tablespoon at a time to soften.
- You can pop them out of the fridge 10 minutes before serving to allow the room temperature to soften them slightly.
How to Store Your Apricot and Date Balls
These coconut apricot balls will keep for a week in an airtight container in the fridge. If only they’ll last that long!
Additions and Substitutions
Honestly the list is pretty well endless. I haven’t tried this recipe with medjool dates yet. They are a lot softer and may make the mix a bit harder to roll.
- You can use almonds blitzed up into almond meal instead of oats.
- Almond butter or peanut butter instead of coconut oil.
- Blended sunflower seeds or hemp seeds (a couple of tablespoons) will give this a nice nutty flavour. A tablespoon of Chia seeds can make it even healthier snack.
- A tablespoon of freshly squeezed orange juice gives it a beautiful zing.
- A pinch of cinnamon if that’s your thing.

Apricot and Date Balls
Equipment
- Food Processor
Ingredients
- 1 cup rolled oats
- 1 cup of dried apricots
- 1 cup of packaged dry dates seeds removed
- 2 tbs of coconut oil
- extra desiccated coconut to coat the balls in.
Instructions
- Using your kitchen food processor pop in the cup of rolled oats and wizz till a fine meal.
- Add the apricots to the coat mix and wizz till combined.
- Add the dates and wizz till combined as well.
- Lastly add the 2 tablespoons of coconut oil and mix till it forms a sticky paste.
- Roll into smallish sized balls and roll and coat in coconut.
- Reintegrate till firm and store covered in the fridge.
- Should make around 15-18 smallish sized balls.
