  • Coconut Milk – a creamy slightly heavier option instead of almond milk but with a hint of coconut flavor..
  • Maple Syrup – a nice change to refined sugar or use the sweetener of your choice
  • Strawberries – red, ripe and low in calories The sweeter and fragrant the better strawberries are a great source of Vitamin C.

How to Make Strawberry Chia Seed Puddings Step by Step Instructions.

STEP 1. Wash and trim the green from your strawberries. cut them in half or quarters and pop them into your food processor. Blitz them up to a beautiful red mushy puree. (this is rather lovely and goopy).

STEP 2. Add your can of full cream coconut milk, along with the maple syrup and vanilla.  mix till it comes into a beautiful creamy consistency and the coconut cream is blended through.

 

STEP 3. Add your chia seeds and mix again.  Allow to sit for 5 minutes before pouring into your dessert jars. 

 

STEP 5. Pop into the fridge for at least 4 hours to set or overnight.

Recipe Tips For Making The Perfect Chia Seed Puddings.

For the perfect pudding, start with fruit that is in season if you can. Choose strawberries that are lovely ripe and tender and have that fresh strawberry flavor.

Wash them thoroughly to remove any sandy gritty-ness.

When adding the strawberries to a food processor allow them to blend until smooth like mushy pulp.

After popping in the chia seeds and mixing them in thoroughly, be sure to let the pudding sit for at least 5 minutes before pouring into your containers.

Why Won’t My Strawberry Chia Seed Puddings Set?

The ratio of chia seeds to liquid is incorrect. When making chia pudding, it’s important to use the correct ratio of chia seeds to liquid. For every 1 cup of liquid, you’ll need 3 tablespoons of chia seeds. For our Strawberry Chia  Pudding recipe we’ve added slightly more to 1/4 of a cup to give it a slightly thicker consistency.  

 The chia seeds were not soaked long enough. Before adding the chia seeds to the liquid, they need to be soaked for at least 30 minutes. This will help them absorb the liquid and expand, resulting in a thicker pudding.

The pudding was not refrigerated long enough.

Can I use coconut cream instead of coconut milk?

Yes we have and it’s lovely.  The texture is somewhat thicker though and will make more of a really creamy chia pudding.

Can I layer the chia pudding?

Yes.   Instead of pouring your chia pudding into individual containers, pour it into a medium bowl and cover with plastic wrap and pop into the fridge for the same time as if you were making them in the recipe.  When you go to serve your chia puddings, alternate a few spoonful’s of pudding with a fruit puree. We pureed some extra strawberries prior to making the chia puddings and set them aside.

Why have my Strawberry Chia Puddings gone rubbery on top?

This usually happens when your individual chia puddings have been left in the fridge uncovered.  Let the puddings set and then be sure to cover them with plastic wrap or place them in an airtight container.  Or to make it easier use a dessert container like a mason jar as it has it’s own lid you can pop on.

Substitutions and Additions

Use either black or white chia seeds –  I don’t know if it’s just me but I’ve thought the white chia seeds seem to set ever so slightly more than the black chia variety.  (but hey that’s me!).

Milk varieties – You can use a plant-based milk of your choice.  I’ve used almond milk for another recipe but find for a dessert chia pudding the coconut milk has a higher fat content which makes it  a creamy texture.

Favorite Toppings – Pure maple syrup drizzled on top is just scrumptious along with some sliced fresh strawberries.

How To Serve – If overnight oats are your thing, then it’s time to flip them on their head. Turn this chia seed pudding recipe into a healthy breakfast.

Ingredients
