These quick One Bowl Banana Muffins are super easy and a low sugar snack that can all be done in your food processor. If you like cooking with almond meal and maple syrup, then this semi sweet muffin is a healthy option for an afternoon tea pick me up.
This is an awesome way to use up all those over ripe bananas left behind in your fruit bowl. Using 3 largish sized bananas and 3 large eggs, makes up a good sized batter to create a large amount of banana muffins enough for everyone.
One Bowl Banana Muffins Recipe
A "One Bowl" muffin mix you can do in your food processor. A quick to make and bake winner.
- 3 largish ripe Bananas
- 3 large eggs
- 1 teaspoon vanilla essence
- 1 teaspoon cinnamon optional
- 1 teaspoon bicarb or baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup maple syrup
- ¼ cup soft brown sugar
- 2 cups almond meal
- 1 cup SR flour
- ¼ choc chips if you like optional

Turn the oven on to 180 degrees Celsius and pop some muffin cases into a muffin tray. Around 9-10.

In your food processor add the bananas, eggs, vanilla, cinnamon, baking soda and baking powder, salt, maple syrup and sugar. Process the ingredients till smooth. Shouldn’t take more than 20 – 30 seconds. If it’s still lumpy keep processing.

Add the flour, almond flour and process again till just combined.

Stir in your choc chips.

Spoon the mixture into the muffin cases. If it’s easier take the cases into the palm of your hand and fill, then pop into the muffing tray.

Cook for 10-15 mins or until firm-ish and when a skewer comes out clean.

Allow to cool.
So now all that's left to do is bung on the kettle, make a nice cup of tea or coffee and enjoy while they're still warm. (Greg came home and snatched one already, he reckoned they were pretty good).
Variations on Your One Bowl Banana Muffins
I like to call this a “template recipe”. The meaning of template recopies is that many of the ingredients can be altered to suit your taste, availability of pantry items and of course your family’s dietary needs.
Substitutions can include:
- Whole meal SR Flour for normal white SR Flour
- Using 1/2 cup of brown sugar instead of 1/4 cup of brown sugar and 1/4 cup of maple syrup
- 1/2 cup of apple puree instead of maple syrup
- White or brown choc chips
- 1/4 cup of blueberries or frozen berries instead of choc chips
While varying the wetter ingredients you may need to adjust the cooking time as well. For smaller muffins you may need to lessen the cook time.
This batch makes super nice sized breakky style muffins. If you are pedantic like me at times, you can weigh out your batter per muffin to ensure they come out nice and even. For 9 larger sized muffins the batter mix weighed around 110-115 gms per case. (just in case you love uniformity in your cooking ha ha!).
The choc chips just make it that little bit more decadent.
I made these One Bowl Banana Muffins in my Thermomix TM6 and found it really easy to do. I’ve also made them in my food processor and both came out perfectly.
