Ingredient Notes
Dates – be sure to use Medjool dates for this recipe. They are chewy dates and will squish and join together to form the base easily. You can buy them already with the pits removed or whole and remove the pits yourself. You’ll find these at the grocery store or wholefoods store easily.
Chocolate & coconut oil – I used dark chocolate melting chips for this recipe with a little coconut oil as this makes it easier to spread onto the crunchy peanuts.
Peanut Butter – for best results when you do your layer of peanut butter, use smooth peanut butter as it’s probably easier to maneuverer.
How to make 5 Ingredient Chocolate Date Bark Recipe STEP BY STEP
STEP 1. Cut the medjool dates lengthways, remove the pits and lay on a flat tray lined with parchment paper. Cover with another layer of parchment paper and roll flat with a rolling pin or bottom of a glass to smoosh out flat.
STEP 2. Spread the peanut butter gently over the top of the dates. Sprinkle your chopped nuts.
STEP 3. Melt the chocolate in a microwave-safe bowl and cover the nuts reaching to the edges and filling all the gaps.
STEP 4. Pop into the fridge for an hour or (if you can’t wait that long) into the freezer for 20 minutes until nice and hard.
Cut into pieces with a large sharp knife or break into unusual shapes to make it a little funkier.
Recipe Tips
Removing the pits – It’s easier to remove the pits from the juicy medjool dates when they are at room temperature. You can break them apart with your fingers to get to the pit but I found a small vegetable knife cutting them lengthways made the job super easy.
Tuff peanut butter – If you peanut butter is firm, heat it up in the microwave for a few seconds and it will make it easier to smooth over the date base. Try not to overload the date layer with too much peanut butter. I know this might be challenging but just a little bit is going to be more than enough.
Flattening the Date Base – To make it easier to flatten the medjool dates lay a piece of parchment paper on a flat surface and not on the baking tray. Place another piece of parchment paper on top and with a rolling pin flatten out. Then slide onto the tray.
Vegan Chocolate Bark – to make this vegan use vegan chocolate instead.
Storage
Keep in an airtight container in the fridge for up to two weeks.
Additions and Substitutions
Nuts – we’ve used cashews for this date bark recipe, but feel free to use peanuts, almonds or whatever nuts you like.
Nut butter – swap out for your fave natural peanut butter, sunflower seed butter or almond butter.
Salt – sprinkle of flaky sea salt

Recipe Card
- 20 Medjool Dates pitted
- ¼ cup peanut butter
- ½ cup cashews peanuts, almonds or nuts of your choice
- 1 cup dark chocolate melting chocolate
- ½ tsp coconut oil
- pinch salt flakes optional but rather nice

Lay a sheet of parchment paper on a flat surface. Cut the dates lengthways and remove the pits and open up the dates so they look like a butterfly.

Lay the dates close to each other in a row of 5 and then make 4 rows. Cover with another layer of parchment paper and get a rolling pin and press flat so they flatten and join together.

Gently peel away the top layer and slide the bottom layer onto a tray.

Spread the peanut butter over the dates halves. Roughly chop the peanuts and sprinkle them over the peanut butter.

Melt the chocolate and coconut oil in a microwave prrof dish in 20 second intervals. When melted pour over the nuts and fill the gaps and the sides gently with a spoon.

Pop into the fridge for an hour or if you can't wait into the freezer for 20 mins.

Cut or break into squares or random pieces and enjoy!
PEANUT BUTTER: If your peanut butter is too stiff, pop into the microwave for 5-10 seconds to become runny.
