½cup cashewspeanuts, almonds or nuts of your choice
1cupdark chocolatemelting chocolate
½tspcoconut oil
pinchsalt flakesoptional but rather nice
Instructions
Lay a sheet of parchment paper on a flat surface. Cut the dates lengthways and remove the pits and open up the dates so they look like a butterfly.
Lay the dates close to each other in a row of 5 and then make 4 rows. Cover with another layer of parchment paper and get a rolling pin and press flat so they flatten and join together.
Gently peel away the top layer and slide the bottom layer onto a tray.
Spread the peanut butter over the dates halves. Roughly chop the peanuts and sprinkle them over the peanut butter.
Melt the chocolate and coconut oil in a microwave prrof dish in 20 second intervals. When melted pour over the nuts and fill the gaps and the sides gently with a spoon.
Pop into the fridge for an hour or if you can't wait into the freezer for 20 mins.
Cut or break into squares or random pieces and enjoy!
Notes
PEANUT BUTTER: If your peanut butter is too stiff, pop into the microwave for 5-10 seconds to become runny.
