5 Ingredient Chocolate Date Bark Recipe

Ingredients

  • 20 Medjool Dates pitted
  • ¼ cup peanut butter
  • ½ cup cashews peanuts, almonds or nuts of your choice
  • 1 cup dark chocolate melting chocolate
  • ½ tsp coconut oil
  • pinch salt flakes optional but rather nice

Instructions

  • Lay a sheet of parchment paper on a flat surface. Cut the dates lengthways and remove the pits and open up the dates so they look like a butterfly.
  • Lay the dates close to each other in a row of 5 and then make 4 rows. Cover with another layer of parchment paper and get a rolling pin and press flat so they flatten and join together.
  • Gently peel away the top layer and slide the bottom layer onto a tray.
  • Spread the peanut butter over the dates halves. Roughly chop the peanuts and sprinkle them over the peanut butter.
  • Melt the chocolate and coconut oil in a microwave prrof dish in 20 second intervals. When melted pour over the nuts and fill the gaps and the sides gently with a spoon.
  • Pop into the fridge for an hour or if you can't wait into the freezer for 20 mins.
  • Cut or break into squares or random pieces and enjoy!

Notes

PEANUT BUTTER: If your peanut butter is too stiff, pop into the microwave for 5-10 seconds to become runny.
