Awesome Choc Chip Cookies
Who can resist Awesome Choc Chip Cookies especially when they contain some secret healthy ingredients. This basic template style choc chip biscuit recipe is one that you can feel comfortable tweaking.
With the addition of almond meal goodness and changing up the choc bits for carob nibs and whole meal flour, your variations can be endless.
By substituting for healthier ingredient options, can turn this into your own signature Choc Chip biscuit recipe that suits your family’s tastes and likes.
This basic no-fail recipe has been a winner here at home!!
The ingredients are one’s you’ll likely already have on hand at home. I know I say that all the time but I do love to do a spontaneous cook up sometimes and if I have a recipe that has ingredients that aren’t commonly in your pantry, then I’ll probably give it a miss.
it may not be the diet recipe we usually try to share with you, but we felt it was a good basic one to have on hand. Plus sometimes it’s nice to have a splurge now and then!

Awesome Choc Chip Cookies Recipe
- 100 g almonds Or use 100 g of Almond meal
- 160 g plain flour
- 125 g butter
- 1 egg
- 100 g soft brown sugar
- 1 teas vanilla essence
- 1.5 teas baking powder
- pinch of salt
- 120 g choc chips

Blend the almonds in the food processor till fine. Or use 100g of almond flour.

Add the plain flour, salt, baking powder and combine for 15 seconds. Remove and set aside.

Pop butter and brown sugar into food processor and combine till smooth and creamy. Usually around 1 minute or more. Alternatively cream with a hand mixer.

Add egg, vanilla essence and mix in for another 30 seconds.

Place the creamed sugar and butter in with the flour and almond meal and mix or knead till just combined. Add your choc chips and mix a little more.

Divide the dough into 10 portions (if you like weigh them out to get evenly sized biscuits), and place on a tray lined with baking paper.
Flatten just a little with your hand.

Place into a heated oven at 180 degrees Celsius for 10 minutes. Check and if needed turn trays and cook for another 2 minutes or longer if you like your cookies crunchier.

Allow to cool for 5 mins and transfer onto a wire rack to cool.
Serve with ice-cold milk (for the big kids) or have with a soothing cup of tea or cappuccino.
As this recipe makes 10 extra large Choc Chip Cookies, If you prefer you can make smaller ones ideal for kid's lunch box's too.
Alternatives for your Awesome Choc Chip Cookies
- If you aren’t an almond meal fan than use all plain flour instead. This will make the biscuits rise a little higher but still taste chewy, soft and moorish.
- White melts work just as good as chocolate ones.
- Add some macadamias to had a bit of a soft chewy-crunch style biscuit.
- Make smaller dough balls to create more biscuits instead of 10 large ones.
- We store our Awesome Choc Chip Cookies in a glass, domed cake container on the kitchen bench. An airtight jar or container in the cupboard is perfect too.
But seriously I don’t think they’ll last that long!
If you are wondering what the difference between almond meal and almond flour may be it’s usually the meal has had the skins left on the nuts and milled or ground into a fine meal.
