Beef Massaman curry is a traditional Thai dish made with chunks of diced beef in a fragrant but milder curry sauce. This dish has a rich flavor with spices like cinnamon, cardamom, cloves, and star anise, along with ingredients like coconut milk, peanuts, and potatoes with a squeeze of lime.

Ingredient Notes

Beef Options – a cheaper cut of meat like gravy beef or chuck steak is perfect to use in the slow-cooker.

Chicken stock – I know this recipe calls for chicken stock when you might think it should have beef stock.  Go figure.  But it does taste superb. Feel free to use either.

Fish sauce & brown sugar – add these two ingredients at the end just before serving.

Massaman Paste – I’ve used the AYAM brand of ready-made massaman curry paste for this recipe and you can find it at a good supermarket and your Asian store.  Feel free to make your own curry paste from scratch if you like or use one of your favorite brands.

How to make Easy Slow Cooker Beef Massaman Curry STEP BY STEP

STEP 1. 

Brown the onions on medium-heat with a little olive oil till lightly browned.  Pop into the slow cooker pot. Brown the meat in batches on a medium-high heat and add to the cooker. Fry the paste for a minute till aromatic and add to the onion and meat mix.

STEP 2.

Add the coconut cream, stock, bay leaves, diced potatoes and nuts (if using), mix, cover and cook for 8 hours on low.

STEP 3.

Add the tablespoon of fish sauce and brown sugar at the end and stir.  Serve on a lovely bed of fluffy jasmine rice, topped with fresh coriander, sprinkled with chopped peanuts and wedges of lime. (cook your rice in the rice cooker around half an hour prior to have it ready to serve).

Recipe Tips

Cut the meat into good sized chunks.  The meat after slow cooking will fall apart and melt in your mouth.

Use coconut milk or cream.  I have used both and they work fine.

How To Serve

Serve your beef massaman with warm roti bread or naan bread (for a little Indian twist) and pop it onto fluffy jasmine rice or steamed white rice to soak up the delicious sauce.

Wedges of lime and a squeeze of lime juice adds a little freshness.  Fresh coriander (or cilantro) and topped with a sprinkle of chopped peanuts.

Like it hot! Sprinkle chopped red chillies for even more heat and spice.

Storage and Reheating

This slow cooker beef massaman curry will last around 3 days in the fridge.  To re-heat just pop into the microwave or heat in a small pot on the stove.

 

Additions and Substitutions

Sweet potato – add a little colour and combo of sweet potato.  You may want to add this a little later on into the cooking process so it won’t get all mushy. Baby potatoes would work here as well.

Can you add a cinnamon stick to this massaman beef curry? Yes you can.  I’ve cooked it with and without cinnamon and it’s entirely up to your own personal taste and how your like your curries.

Ingredients
  • 4 tabs olive oil
  • 2 large brown onions cut into thin wedges
  • 1 kg gravy beef/chuck steak slow cooking meat
  • 200 gms massaman curry paste
  • 1 cup coconut cream or milk if you prefer
  • ½ cup peanuts unsalted
  • 1 cup chicken stock
  • 600 gms potatoes diced chunkily
  • 2 dried bay leaves
  • 1 tabs fish sauce
  • 2 tabs brown sugar
  • Lime wedges and coriander to serve
Instructions
  1. Add the oil into the frypan and place over medium heat. Add the onions, stirring for a few minutes till brown. Pop into the slow cooker.

  2. On a medium-high heat add a little more oil and brown the meat in batches. Place in with the onions in the slow cooker. Heat the curry paste for a minute until you can smell the aromas and add to the meat and onion mix.

  3. Add the coconut milk, stock, potatoes, bay leaves and nuts (if using) to the cooker bowl and set for 8 hours on low.

  4. When the massaman curry is cooked add the fish sauce and brown sugar and stir to mix in.

  5. Serve on a bed of fluffy rice, topped with fresh coriander and a squeeze of lime or lime wedges.
