4 tabsolive oil
2large brown onionscut into thin wedges
1kggravy beef/chuck steakslow cooking meat
200gmsmassaman curry paste
1cupcoconut creamor milk if you prefer
½cuppeanutsunsalted
1cupchicken stock
600gmspotatoesdiced chunkily
2dried bay leaves
1tabsfish sauce
2tabsbrown sugar
Lime wedges and coriander to serve
Instructions
Add the oil into the frypan and place over medium heat. Add the onions, stirring for a few minutes till brown. Pop into the slow cooker.
On a medium-high heat add a little more oil and brown the meat in batches. Place in with the onions in the slow cooker. Heat the curry paste for a minute until you can smell the aromas and add to the meat and onion mix.
Add the coconut milk, stock, potatoes, bay leaves and nuts (if using) to the cooker bowl and set for 8 hours on low.
When the massaman curry is cooked add the fish sauce and brown sugar and stir to mix in.
Serve on a bed of fluffy rice, topped with fresh coriander and a squeeze of lime or lime wedges.
