Easy Slow Cooker Beef Massaman Curry

Ingredients

  • 4 tabs olive oil
  • 2 large brown onions cut into thin wedges
  • 1 kg gravy beef/chuck steak slow cooking meat
  • 200 gms massaman curry paste
  • 1 cup coconut cream or milk if you prefer
  • ½ cup peanuts unsalted
  • 1 cup chicken stock
  • 600 gms potatoes diced chunkily
  • 2 dried bay leaves
  • 1 tabs fish sauce
  • 2 tabs brown sugar
  • Lime wedges and coriander to serve

Instructions

  • Add the oil into the frypan and place over medium heat. Add the onions, stirring for a few minutes till brown. Pop into the slow cooker.
  • On a medium-high heat add a little more oil and brown the meat in batches. Place in with the onions in the slow cooker. Heat the curry paste for a minute until you can smell the aromas and add to the meat and onion mix.
  • Add the coconut milk, stock, potatoes, bay leaves and nuts (if using) to the cooker bowl and set for 8 hours on low.
  • When the massaman curry is cooked add the fish sauce and brown sugar and stir to mix in.
  • Serve on a bed of fluffy rice, topped with fresh coriander and a squeeze of lime or lime wedges.
