Honestly this easy 2 ingredient chocolate mousse recipe had no fancy technique. No egg whites to beat. No cream to whip. Just dark chocolate, boiling water and a blender that does all the actual magic. Just chocolate and hot water.

The result? Gird your loins as this is a mousse that’s so airy and glossy it looks like you trained years to achieve it.  It’s acutally so simple it feels like breaking the rules.

Now I can’t take the credit for this amazing and simple chocolate mousse recipe.  It’s been a bit of a viral trend about 12 months ago.  Where was I?  I don’t know, but now I’ve found this cool hack I’m totally besotted.

While chocolate might be an occasional treat here at Just One Bite at a Time it somehow pops up all over our recipes section. This simpe 5 ingredient Chocolate Date Bark recipe was also a trend on social media. My personal fave is the No Bake Caramel Slice With Medjool Date.

Ok well not all our chocolate recipes are totally ….on the uber healthy side.  But in saying that I think there’s no point in not having a treat so I thought I would also link to some of our other fab treats. While chocolate mousse is normally a delicatly whipped dessert, this recipe turns everything on it’s head.  Honestly when I first heard about it I thought it won’t work.  Chocolate and water don’t mix and when melting it if water comes in contact with melted chocolate it can seize.

So I had to rethink the whole method around creating a delectable soft chocolate mousse. After seeing this 2 ingredient simple process I just had to make it.  I would often shy away from making a other mousse recipes as I thought with all that egg seperating, whiping and folding will there be something that can go wrong?

You’ll need the following ingredients to make this amazing 2-ingredient chocolate mousse recipe. While writing this I thought there’s only two simple ingredients do I need to write about it? Well there are a few things to know about the chocolate in this recipe.

Chocolate – the main star of the show.  For the best results, I used a good quality dark chocolate with 70% cocoa solids.  The brand I used was Whittakers.

Boiled Water –  This will melt the chocolate melt before pouring into the blender.

  1. Chop your choclate into small pieces or like thick chocolate shavings to make it easier to melt.  Transfer into a larger heatproof bowl and add the boiling water and whisk to combine.

2.Pour the melted chocolate mixture into your blender and blitz for 2 minutes.

3. Pour into glass or containers of your choice and pop into the fridge for around 6-8 hours.

Recipe Tips

Blending for a minimum of 2 minutes is what provides the air bubbles to make this a fluffy mousse.

Storage Tips

Chocolate mousse keeps surprisingly well, which makes it a great make-ahead dessert.

Store it covered in the fridge for up to three days. Use plastic to cover the glass jars or ramekins tightly with plastic wrap or lids to help prevent a skin from forming. The texture will firm up significantly in the fridge, which some people prefer. If you want it softer, let it sit at room temperature for about 10 minutes before serving.

You can freeze it I’m told but haven’t tried it as yet.  The texture changes slightly. Freeze individual portions in airtight containers for up to a month.

Don’t leave it out at room temperature for more than two hours, especially in warm weather. The cocoa butter will start to soften too much and the mousse can lose its structure or even separate slightly. Keep it cold until you’re ready to serve.

 

Additions and Substitutions

Adding some additional flavourings can change this mousse up.

Vanilla paste or some orange zest gives it that jaffa kind of flavour,

Make it vegan. Use dairy-free dark chocolate. Just double-check the label to make sure there’s no milk powder hiding in there.

How to Serve the best chocolate mousse.

Serve with whipped cream (even more decadance), fresh berries, icecream, coconut youghurt/icecream….well the list is endless. You’ll be the star of all the dinner parties.

Got any leftover mousse? – Layered parfaits. Alternate spoonfuls of mousse with crushed biscuits, custard or whipped cream in a glass. Add fresh fruit if you’re feeling fancy.

Can I use white chocolate for this 2 ingredient mousse?

White chocolate may have less cocoa solids and has more sugar you may need to adjust the water to chocolate ratio.  I haven’t tried it as yet but think it would be lovely.

I don’t have a high speed blender can I use a whisk or electric beater?

I have seen this mousse made by hand.  After melting the chocolate use an ice bath . Set your mixing bowl over a larger bowl filled with ice and (ice water) while you whisk. This cools the mixture faster and helps the mousse firm up quicker, giving you a mousse that will firm up more quickly. Don’t under-whisk or over beat. The biggest mistake is stopping too early or beating too long. If your mousse looks thin and glossy but hasn’t lightened in color, keep going. The transformation happens in the last minute or two of whisking, and that’s when the magic really kicks in. The air is the secret to give that light and airy soft chocolate mousse.

  • 200 gm chocolate dark 70% cocoa solids *note
  • 2 cups boiling water

Instructions
