Our first ever attempt for crackers was our Easy Seed Crackers recipe..And I have to say it was amazing and have had the thumbs up from everyone who’s eaten them. They’re crunchy and you can customize to suit your tastebuds. Plus no additives, preservatives or nasty ingredients and no xanthan gum. Just seeds, almonds, chia, water, and salt that transform into crackers so good you’ll actually want to eat them plain.
Ingredients You’ll Need
Only a handful of simple ingredients are needed to make these crispy chia seed crackers

Almonds – Almond meal (with skins on and blitzed to a fine crumb) will give the crackers a darker and taste more rustic appearance.
Sunflower seeds – after blitzing make a beautiful flour but you can also buy sunflower flour ready to go at your wholefoods store too.
Chia seeds – are your binder that holds everything together. White or black chia both work. I
Almond Flakes – or slivered almonds. Thise give a little visual look and texture.
Olive oil – the perfect oil to combine all the dry ingredients.
Salt – is essential. Without it, these taste a little bit flat. You can add more after baking if you want them saltier, but a little bit into the dough first makes all the difference.
Water – just enough to make a lovely pliable dough

- Don’t over-process the mixture.
- Roll evenly for crisp crackers. (a rolling pin is easy to use for this seed cracker recipe)
- Use a large piece of parchment paper to make the dough easy to handle. (you’ll actually need 2 pieces of parchment paper)
- Baking time may vary. The longer you cook the darker they get and they become crispier crackers.
How to make Easy Gluten-Free Seed Crackers (with Almonds & Chia) STEP-BY-STEP Instructions
- Pop your almonds and sunflower seeds into a food processor and process till a fine crumb. Transfer to a mixing bowl and add the rest of the ingredients and mix gently into a dough.

2. Place your cracker dough onto a sheet of parchment paper and then place another sheet on top and roll out thinly to the size of your sheet pan.

3. Peel the top layer of parchment paper away, slide onto your tray and gently score the dough with a sharp knife into the shape of cracker you like. Squares seem to be the easiest. Don’t separate the pieces, just score lines on the dough. This makes them easy to snap apart after baking.

4. Bake in a moderate oven 180 degrees celsius or 350 fahrenheit for around 12-15 minutes. You can cook the gluten free crackers longer if you like. The outside edges will darken a little though. Allow to cool to room temperature before serving and gently snap apart.

- Charcuterie board – these crispy chia seed vegan crackers are lovely to have on cheese platters to cater for vegans and gluten-free friends. Hint-Keep them seperate in a small bowl to seperate from any other crackers on the board.
Additions and Substitutions
- Add rosemary or thyme.
- Sprinkle with sesame seeds and poppy seeds.
- Cracked black pepper or chilli flakes or flaked salt
- Garlic powder, onion powder, smoked paprika, cumin, rosemary, or nutritional yeast. You might need to try and bake a few times to get the taste you like. Fresh herbs don’t work well because they add moisture and burn in the oven.
FAQ
Q. Why aren’t my Crackers crispy?
A. The dough may have needed a little longer in the oven or the temp too low. The seed mixture may have been rolled out too thickly.
Q. I don’t have a food processor can I use almond meal instead?
A. Yes of course! You by all means use almond meal ready to use form the supermarket. You can also use sunflower seed flour as well so no need to process anything and skip the foodprcessor altogether.
Q. Can I make these gluten-free seed crackers without chia seeds?
A. The 1/4 of a cup chia seeds are what actually do the binding in this dough and are the magic ingredient.

Equipment

Ingredients
- 1 cup raw almonds
- ¼ cup sunflower seeds
- ¼ cup chia seeds
- ¼ cup slivered almonds
- 2 tabs olive oil
- ½ tsp salt
- ⅓ cup water
Instructions
- Pre-heat your oven at 180 degrees celsius.
- Add your almonds and sunflower seeds into a food processor and blitz to a crumb or meal like consisitency.
- Tip into a bowl and add the rest of the ingredients. (chia seeds, salt, olive oil, water and almond flakes and combine gently to form a soft dough.
- Cut two large sheets of baking paper and place the ball of dough between them and roll out thinly to fit the size of the tray. Remove the top layer of baking paper and slide the layer of biscuit dough onto the tray.
- With a knife score the dough into squares. (try not to drag the knife as it will pull the dough).
- Cook for 12 minutes or longer if you think it's needed. The biscuits can darken on the outer edge first.
- Allow to cool and break into squares and serve with your cheese and dips.
