INGREDIENTS

  • 4 Lebanese cucumbers medium sized
  • ¼ red onion
  • ½ red capsicum finely diced

DRESSING

  • ¼ cup rice wine vinegar
  • 1 tsp sesame oil
  • 3 tsp honey
  • 1 tsp sesame seeds
  • ¼ tsp salt

Instructions

Method

  1. Slice your cucumbers in your desired shape. Thin or thick, circular or slanted. Whatever you like.

  2. Finely dice the red capsicum and thinly slice the red onion and combine with the cucumbers in a bowl.

  3. Place all the dressings ingredients into a jar and shake well. Pour over the salad and let sit for half an hour. The longer you leave it the more the dressing soaks into the salad.
