Ingredients

INGREDIENTS

  • 4 Lebanese cucumbers medium sized
  • ¼ red onion
  • ½ red capsicum finely diced

DRESSING

  • ¼ cup rice wine vinegar
  • 1 tsp sesame oil
  • 3 tsp honey
  • 1 tsp sesame seeds
  • ¼ tsp salt

Instructions

Method

  • Slice your cucumbers in your desired shape. Thin or thick, circular or slanted. Whatever you like.
  • Finely dice the red capsicum and thinly slice the red onion and combine with the cucumbers in a bowl.
  • Place all the dressings ingredients into a jar and shake well. Pour over the salad and let sit for half an hour. The longer you leave it the more the dressing soaks into the salad.
