Ingredients
3cupsslicedcooked chicken.
1avocadosliced.
1/2red onionsliced.
1/2cupolivesKalamatas or Green sliced in half.
3/4cupsun dried tomatoes drained.
1/3cupcrumbled feta cheese.
1/4cuptoasted pine nuts.
Dressing
1/3cupolive oil.
2tbsplow fat plain Greek yogurt.
2tbsplight sour cream.
1/4cupreduced fat mayonnaise.
1/2tspsalt or to taste.
1/4tspblack pepper or to taste.
1clovegarliccrushed.
1tspdried dill or fresh if you have it.
1/2tsphoney.
1tbspwhite wine vinegar.
juice of 1/2 lime or lemon.
Instructions
In a jar or bowl, combine all dressing ingredients. Whisk until well blended and set aside.
In a large bowl combine all salad ingredients. Pour dressing over the top, then toss well to combine. Serve immediately or cover and refrigerate up to 2 days.
