Tropical flavoured chia pudding perfect for Summery desserts

2mangos
2 passion fruits
1cuptinned coconut milk*full fat
¼cupwhite chia seeds
2tabsmaple syrup
1cup coconut yogurt
Instructions
Peel mangos and pop flesh into a food processor and blitz to form a puree. Save half of the puree and set aside for decoration. Add the other half to a bowl.
Add the pulp of 1 passion fruit to the bowl of mango along with the maple syrup, coconut milk and chia seeds and whisk till combined. Cover and place in the fridge for at least 2 hours or overnight.
Grab your dessert glasses add a layer of the chia pudding mix into them. then add a layer of pureed mango, then a couple of spoonful's of coconut yoghurt and repeat another layer.
Serve with fresh passionfruit pulp, more mango if you like and a sprig of mint for colour.
Notes
Store any leftover coconut milk in an airtight container in the fridge for up to 3 days. Use in marinades, sauces or dressings.
