Green Goddess Salad Recipe
Gird your loins as you’ll be so amazed at how fresh, crunchy and flavorful this salad is. And rather moorish too!

SALAD INGREDIENTS
- ¼ green cabbage
- 4 Lebanese cucumbers
- 4 shallots
- ½ cup chopped chives finely
DRESSING INGREDIENTS
- 1 cup basil leaves
- 1 cup parsley leaves
- 2 tabs lime juice fresh
- ¼ cup olive oil
- ½ cup Greek Yoghurt plain
- 1 tbs honey
- 1 tabs rice wine vinegar
- ¼ cup cashews
- 1 clove garlic
- ½ tsp salt
- ½ tsp black pepper freshly ground
- water to thin if necessary *
Finely chop the cabbage and pop into a largish bowl.
Then finely chop the cucumbers and add to the cabbage
Slice the shallots into fine slices and also a ¼ cup finely chopped chives and add to the bowl.
DRESSING INSTRUCTIONS
Into a food processor or blender add all the liquid ingredients - olive oil, lime juice, honey, Greek yoghurt and vinegar.
Then add the rest of the ingredients on top.
Blitz till the dressing becomes lovely and green. If the dressing is too thick add a little water if necessary and blend again.
Pour over your salad ingredients and serve. *note
- Add a little water to thin out the dressing if needed though a thick dressing makes this Green Goddess Salad so luxurious.
- If you would like to serve this salad at a later time, leave off the dressing until ready to serve.
