Place a pot onto the stove and add the monk fruit and half a cup of plain water and bring to the boil. Allow to cool.
Cut and juice the 3 lemons and strain the seeds and pulp.
Pour strained juice into a jug.
After the syrup has cooled, pour into the jug with the lemon juice.
Add 4 cups of sparkling water and a handful of ice and stir well.
Add slices of lemon and a few sprigs of mint as a garnish.
Serve in glasses with ice and lemon slices and sprigs of mint to add colour.
