Need something warm you can whip up in half an hour? This Chicken Vegetable Noodle and Meatball soup is your go to. A little bit of everything in one soup plus you can make this easily after work. Chicken, 3 cups of veggies plus those warm and heatening noodles to make a winner for the kids too.
Divide the chicken mince into 12 (or more portions) and roll to make a meatball. Set aside in the fridge until ready to use.
Bring the 4 cups of chicken stock and the 3 cups of vegetables up to the boil. Then lower to a simmer and getnly place the meatballs into the stock. Bring back to the boil and lower to a simmer again for around 8 minutes.
Add the noodles and cook for another 4 minutes or until noodles are cooked.
Turn off the heat and add 1 cup of baby spinach leaves and serve.
Add salt and pepper if you need to tweak the seasoning for your own taste.
